I’m going through my berry phase again and all I seem to want to eat when it comes o fruit is either blueberries, raspberries or strawberries. Thankfully it’s almost the season and I can start using fresh instead of frozen!
I used the last egg this morning so I had to improvise and make a chia egg, which turned out to work the exact same!
Recipe
Makes: 5-8 cookies depending on size!
Ingredients
1 scoop vanilla protein powder
1/2 mashed banana
1 chia egg (1 tbsp chia seed + 3 tbsp water)
1/4 cup Kodiak Cakes Protein Mix
1/2 tsp sweetener of choice
1-2 TBSP soy milk if needed.
1/4 cup raspberries
1-2 pieces white chocolate
Directions
Start by making a chia egg which is simply one tbsp chia seeds mixed with 3 tbsp of water.
Add in mashed banana and then dry ingredients ending with soy milk.
Place spoonfuls onto baking May and place in a preheated 350 degree oven for 12-15 minutes.
Top with pieces of white chocolate and raspberries.
Take out, cool and enjoy!
Love this recipe! A nice change from the protein pancake/waffle haha I will definitely be making this with my huge stash of vanilla protein powder!
