Raspberry Vanilla Protein Roll-Ups

You know it’s going to be a horrible day when you break two wine glasses and lose your keys before it’s even 8:30am. After finally taking P to school and sadly making her late because of the whole key incident I chose to go back home and make something yummy for breakfast instead of eating on the run in a train full of people.


You’ll notice that in most of my recipes I use egg whites instead of a full egg. I don’t particularly like egg yolks so when I have the choice I admit them from my recipes. Of course you could change this recipe from 2 egg whites to 1 whole egg if you chose.

Egg White Raspberry roll ups

2 egg whites
1 tbsp coconut flour
1/2 mashed banana
1/2 tsp baking powder

Preheat pan and GREASE well with olive oil. DOn’t be afraid of the fats that everyone is so scared of eating. If you don’t want your mixture to stick to the pan you’re going to need to be a little generous.

Whip egg whites until fluffy and then add in the rest of he ingredients. The coconut flour may seem to be lumpy and not want to mix in, so wait a couple of minutes and mix again.

Cook like a large pancake and flip once bubbles start forming. Be patient or you will end up with a mess, trust me been there done that and had to eat a scramble instead of the roll ups

Once cooked on both sides remove from pan and let cool. While waiting mix your filing with the following ingredients.

1/2 cup greek yogurt or fromage blanc
1/2 scoop of vanilla whey
1/4 cup raspberries

Spread filling onto omelette and then cup into strips. Then work your magic, and roll them up! Voila, you now have little pancake bikes to enjoy alongside a hot cup of coffee i’m sure! Top with more raspberries and yogurt of course if you’d prefer more!
